Ingredients
  

  • 3 potatoes grated
  • 4 tablespoons cornstarch
  • 100 grams 3.5 oz mozzarella cheese, grated
  • Fresh parsley chopped (to taste)
  • Salt to taste
  • Black pepper to taste
  • Olive oil for frying

Method
 

  1. Grate the potatoes and squeeze out excess moisture using a clean kitchen towel.
  2. In a bowl, mix the grated potatoes with cornstarch, salt, black pepper, and chopped parsley.
  3. Take a portion of the mixture, flatten it in your hands, place some grated mozzarella in the center, and cover with more potato mixture to form a patty.
  4. Heat olive oil in a pan over medium heat. Fry the fritters for 3-4 minutes per side until golden brown and crispy.
  5. Remove from the pan, let them rest for a minute, and serve warm with your favorite dipping sauce.

Notes

  • Make sure to squeeze out excess moisture from the potatoes to prevent soggy fritters.
  • Swap mozzarella for cheddar, gouda, or parmesan for a different flavor.
  • To make them gluten-free, use potato starch instead of cornstarch.
  • For a healthier version, bake at 400°F (200°C) for 20-25 minutes, flipping halfway.
  • Serve with garlic yogurt dip, sour cream, or marinara sauce for extra flavor.
