Ingredients
  

  • 4 medium potatoes grated
  • 2 eggs
  • 100 g cheese shredded
  • 3 tbsp all-purpose flour
  • 1 small onion finely chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp olive oil for cooking

Method
 

  1. Grate the potatoes, sprinkle with salt, and let them sit for 5 minutes. Squeeze out excess moisture using a clean kitchen towel.
  2. In a large bowl, mix the grated potatoes, eggs, shredded cheese, flour, onion, black pepper, and garlic powder until well combined.
  3. Heat olive oil in a large skillet over medium heat.
  4. Scoop small portions of the mixture into the pan, flatten slightly, and cook for 3–4 minutes per side until golden and crispy.
  5. Remove from the pan and place on a paper towel to drain excess oil.
  6. Serve hot with sour cream, yogurt, or your favorite dipping sauce.

Notes

  • For extra crispiness, make sure to remove as much moisture as possible from the potatoes.
  • Try adding chopped fresh herbs like parsley or dill for added flavor.
  • Use Parmesan instead of cheddar for a richer, nuttier taste.
  • To bake instead of frying, place the bites on a lined baking sheet and bake at 200°C (400°F) for 20–25 minutes, flipping halfway.
