Ingredients
  

  • 2 boneless skinless chicken breasts (about 1 pound)
  • 1 cup buttermilk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 4 sandwich rolls
  • 1 cup romaine lettuce chopped
  • 1/2 cup Caesar dressing
  • Extra Parmesan cheese for topping

Instructions
 

  • In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour or up to overnight for best flavor.
  • Preheat your oven to 400°F. Line a baking sheet with parchment paper.
  • In a shallow dish, mix together the flour, panko breadcrumbs, and grated Parmesan cheese. Remove the chicken from the buttermilk mixture, allowing excess to drip off. Dredge each chicken breast in the flour mixture, pressing gently to adhere.
  • Place the coated chicken breasts on the prepared baking sheet. Bake for 25-30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F).
  • While the chicken is baking, prepare the sandwiches. Slice the rolls in half and toast them lightly if desired.
  • Once the chicken is done, assemble the sandwiches by spreading Caesar dressing on the bottom half of each roll. Top with crispy chicken, chopped romaine lettuce, and additional Parmesan cheese. Place the top half of the roll on each sandwich.
  • Serve immediately and enjoy!
