Ingredients
  

  • 2 medium potatoes peeled and boiled
  • 1 egg
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons all-purpose flour
  • 1 –2 spring onions chopped
  • ½ cup breadcrumbs
  • Salt and pepper to taste
  • Oil for frying

Instructions
 

  • Mash the boiled potatoes in a medium bowl until smooth. Let cool slightly.
  • Add the egg, Parmesan cheese, flour, and chopped spring onions. Season with salt and pepper.
  • Mix everything until well combined and shape into small patties (about 2 tablespoons of mixture each).
  • Coat each patty in breadcrumbs, pressing gently to help them stick.
  • Heat oil in a skillet over medium heat.
  • Fry the patties for 2–3 minutes on each side or until golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • Serve warm with sour cream, yogurt dip, or your favorite sauce.

  • Leftover mashed potatoes work beautifully for this recipe.
  • You can add chopped herbs like parsley or chives for more flavor.
  • For a spicy twist, add a pinch of chili flakes or paprika to the mix.
