- 2 medium potatoes peeled and boiled
- 1 egg
- ¼ cup grated Parmesan cheese
- 2 tablespoons all-purpose flour
- 1 –2 spring onions chopped
- ½ cup breadcrumbs
- Salt and pepper to taste
- Oil for frying
Mash the boiled potatoes in a medium bowl until smooth. Let cool slightly.
Add the egg, Parmesan cheese, flour, and chopped spring onions. Season with salt and pepper.
Mix everything until well combined and shape into small patties (about 2 tablespoons of mixture each).
Coat each patty in breadcrumbs, pressing gently to help them stick.
Heat oil in a skillet over medium heat.
Fry the patties for 2–3 minutes on each side or until golden brown and crispy.
