- Begin by trimming the ends of the enoki mushrooms and slice them vertically into thin layers. Set aside.
- In a pot, pour in about 2–3 inches of neutral oil and heat to 375°F (190°C).
- In a bowl, whisk together the all-purpose flour, potato starch, baking powder, salt, white pepper, garlic powder, paprika, and cayenne pepper. Gradually mix in cold sparkling water until smooth.
- Dip the prepared enoki mushrooms into the batter, ensuring they're well-coated.
- Carefully lower the mushrooms into the hot oil and fry for 1-2 minutes until golden brown and crispy. Drain on a wire rack.
- Sprinkle with salt and furikake seasoning if desired. Serve warm with your choice of dipping sauces.
