Method
 

Step-by-Step Instructions
  1. Begin by trimming the ends of the enoki mushrooms and slice them vertically into thin layers. Set aside.
  2. In a pot, pour in about 2–3 inches of neutral oil and heat to 375°F (190°C).
  3. In a bowl, whisk together the all-purpose flour, potato starch, baking powder, salt, white pepper, garlic powder, paprika, and cayenne pepper. Gradually mix in cold sparkling water until smooth.
  4. Dip the prepared enoki mushrooms into the batter, ensuring they're well-coated.
  5. Carefully lower the mushrooms into the hot oil and fry for 1-2 minutes until golden brown and crispy. Drain on a wire rack.
  6. Sprinkle with salt and furikake seasoning if desired. Serve warm with your choice of dipping sauces.

Serve immediately for the best texture. Can be reheated in an air fryer to restore crispiness.
