Preparation Steps
- Begin by peeling and mashing the ripe bananas in a mixing bowl until smooth.
- In the same bowl, add the all-purpose flour, coconut flakes, rice flour, baking powder, baking soda, salt, and optional cinnamon powder. Stir thoroughly until the batter is creamy and sticky.
- Cover the bowl and let the batter rest for about 30 minutes at room temperature.
- Heat the oil in a deep pot to about 350°F (175°C). Test the oil with a small spoonful of batter.
- Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes until golden brown.
- Using a slotted spoon, remove the fritters and place them on paper towels to drain excess oil.
- Serve the fritters warm, optionally dusting with powdered sugar or serving with dip.
