Preparation Steps
  1. Begin by peeling and mashing the ripe bananas in a mixing bowl until smooth.
  2. In the same bowl, add the all-purpose flour, coconut flakes, rice flour, baking powder, baking soda, salt, and optional cinnamon powder. Stir thoroughly until the batter is creamy and sticky.
  3. Cover the bowl and let the batter rest for about 30 minutes at room temperature.
  4. Heat the oil in a deep pot to about 350°F (175°C). Test the oil with a small spoonful of batter.
  5. Drop spoonfuls of batter into the hot oil and fry for 3-4 minutes until golden brown.
  6. Using a slotted spoon, remove the fritters and place them on paper towels to drain excess oil.
  7. Serve the fritters warm, optionally dusting with powdered sugar or serving with dip.
