Crispy Parmesan Chicken & Veggie Patties – A Flavor-Packed Comfort Food

These Crispy Parmesan Chicken & Veggie Patties are the perfect balance of juicy, cheesy, and crispy goodness. Ingredients
  

For the Patties:
  • 3 eggs
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons mayonnaise
  • 4 tablespoons flour
  • Olive oil for frying
For the Filling:
  • 400 g 14 oz ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 small zucchini grated and squeezed dry
  • 1 small carrot grated
  • 2 tablespoons chopped parsley
  • 2 garlic cloves minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano

Method
 

  1. In a large bowl, combine the ground chicken, Parmesan, mozzarella, zucchini, carrot, parsley, garlic, paprika, oregano, salt, and black pepper. Mix well.
  2. In a separate bowl, whisk the eggs, mayonnaise, and flour until smooth. Add this mixture to the chicken filling and stir until fully combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop a spoonful of the mixture and shape it into a patty. Carefully place it in the skillet.
  5. Cook each patty for about 3–4 minutes per side until golden brown and fully cooked through.
  6. Transfer to a paper towel-lined plate to remove excess oil. Serve warm with your favorite dipping sauce.

Notes

  • To bake instead of frying, place the patties on a lined baking sheet and bake at 200°C (400°F) for 20–25 minutes, flipping halfway through.
  • These patties can be stored in the fridge for up to 3 days or frozen for up to 3 months. Reheat in the oven or a skillet for the best texture.
  • Serve with garlic yogurt sauce, spicy aioli, or a fresh salad for a complete meal.
