  • 2 cups Plain Flour Can be replaced with a gluten-free blend.
  • 1 cup Boiling Water Let it cool for 2 minutes before mixing.
For the Savory Filling
  • 1 lb Pork Mince (Ground Pork) Ground chicken or mushroom-tofu mix works great for alternatives.
  • 4 stalks Spring Onions Substitute with red onions for a bolder taste.
  • 2 tbsp Chives Enhance freshness.
  • 2 tbsp Coriander Mint can be a delightful alternative.
  • 2 cloves Garlic Consider using onion powder as a substitute.
  • 1 tbsp Ginger Ground ginger is a substitute when fresh is not available.
  • 2 tbsp Soy Sauce (Light and Dark) Tamari and coconut aminos are great alternatives.

Method
 

Dumpling Preparation
  1. In a large bowl, combine plain flour and a pinch of salt, creating a well in the center. Gradually pour in 1 cup of boiling water while stirring with chopsticks or a fork. Once combined, knead the dough on a floured surface for about 10 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes at room temperature.
  2. In a mixing bowl, combine the pork mince, chopped spring onions, chives, coriander, minced garlic, grated ginger, both soy sauces, sesame oil, rice wine vinegar, and the egg. Mix thoroughly until all ingredients are well integrated.
  3. Divide the rested dough into 8 equal pieces and roll each piece into a thin circle, about 3 to 4 inches in diameter. Place 1-2 tablespoons of the savory filling in the center of each wrapper. Carefully fold the dough over the filling to create a half-moon shape, pressing the edges firmly to seal.
  4. Heat 2 tablespoons of olive oil in a non-stick skillet over medium-high heat. Lay the dumplings in the pan, ensuring they do not touch. Fry for about 2 minutes until the bottoms are golden brown and crispy. Pour in ¼ cup of water, cover with a lid, and reduce to medium-low to steam for 1 minute.
  5. After steaming, remove the lid and let the dumplings cook for an additional 2-3 minutes, allowing the bottom to crisp up even more. Remove them from the skillet carefully and place them on a serving plate.
  6. Top each crispy dumpling taco with shredded carrots, slices of cucumber, chopped spring onions, fresh coriander, and a drizzle of chili oil. Serve warm.

Notes

Store leftover Smash Dumpling Tacos in an airtight container for up to 3 days. For freezing, freeze uncooked dumplings individually before transferring to a sealed bag. Cook from frozen when ready.
