- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Boil Yukon Gold potatoes in a large pot with water for 15-20 minutes until fork-tender.
- Drain the potatoes and cool slightly. Smash each potato gently.
- In a large bowl, toss smashed potatoes with hot olive oil and sprinkle with za’atar.
- Place the seasoned potatoes on the baking sheet and bake for 20-25 minutes until golden brown.
- While baking, prepare tahini yogurt by whisking tahini, lemon juice, salt, and water together.
- Serve baked potatoes warm, drizzled with tahini yogurt.
Notes
For best results, do not overcrowd the baking sheet and flip the potatoes halfway through for even crispiness.
