Prepare the zucchini – Grate the zucchini, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid.
Make the batter – In a bowl, mix the zucchini with eggs, green onions, flour, baking powder, and black pepper. Stir until combined.
Heat the oil – In a large skillet, heat olive oil over medium heat.
Cook the fritters – Drop spoonfuls of batter into the pan, flatten slightly, and fry for 2–3 minutes per side until golden brown.
Drain and serve – Remove and place on paper towels to absorb excess oil. Serve warm with yogurt or your favorite sauce.
