Ingredients
  

  • 2 cups diced cantaloupe
  • 2 cups diced cucumber
  • 1/4 cup red onion finely chopped
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup feta cheese crumbled (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon honey optional
  • Salt and pepper to taste

Instructions
 

  • In a large mixing bowl, combine the diced cantaloupe, diced cucumber, and finely chopped red onion.
  • Add the chopped mint leaves and crumbled feta cheese (if using) to the bowl.
  • In a small bowl, whisk together the olive oil, lime juice, honey (if using), salt, and pepper until well combined.
  • Pour the dressing over the salad mixture and gently toss to combine all ingredients evenly.
  • Chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
  • Serve chilled and enjoy!
