- Begin by processing 1/3 cup of walnuts in a food processor until they resemble coarse sand, which should take about 30 seconds. Transfer to a bowl and set aside.
- In the same food processor, add the remaining walnuts and process until they form a fine powder. Then add the Medjool dates, pumpkin purée, cocoa powder, sea salt, and vanilla extract. Blend everything until smooth, about 1 minute.
- Use a spoon to scoop out portions and roll them into balls about the size of golf balls. Aim for a total of 8 Chocolate Brownie Date Balls; this should take about 5 minutes.
