Step-by-Step Instructions for Antojitos
  1. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 2 tablespoons of vegetable oil. Gradually add about 3/4 cup of warm water while mixing with your hands until the dough forms a soft ball. Knead for 5 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for 30 minutes.
  2. Divide the rested dough into 8 equal pieces and shape each piece into a ball. On a lightly floured surface, use a rolling pin to flatten each ball into a thin tortilla, approximately 6 inches in diameter.
  3. Heat a non-stick skillet over medium-high heat for about 2 minutes. Carefully place one rolled tortilla in the skillet and cook for 30-45 seconds, or until you see bubbles forming on the surface. Flip it over and cook for another 30 seconds.
  4. Once the tortillas are ready, lay one on a clean surface and spread a thin layer of refried beans down the center. Top with shredded cheese, your choice of cooked meat, and chopped veggies as desired. Fold the sides over the filling, then roll from the bottom up tightly.
  5. In a deep skillet or frying pan, heat about 1 inch of oil over medium heat to 350°F (175°C). Gently place two or three assembled Antojitos in the hot oil and fry for 2-3 minutes on each side until golden brown and crispy.
  6. Once all your Antojitos are fried to perfection, transfer them to a serving platter. Serve immediately with your favorite dips, like salsa or guacamole.
