Step-by-Step Instructions
  1. Begin by slicing the ciabatta loaf horizontally to create two equal halves. Drizzle olive oil over both cut sides and spread the olive tapenade across each half.
  2. On the bottom half of the ciabatta, crumble the goat cheese evenly and add thin slices of tomato, followed by the shredded roast chicken and optional pepperoncini.
  3. Lay the arugula over the top of the chicken and gently press down to compact the filling slightly.
  4. Carefully place the top half of the ciabatta onto the sandwich and tightly wrap it in plastic wrap.
  5. Place a heavy object on top of the wrapped sandwich and let it rest for at least 1 hour at room temperature or overnight in the refrigerator.
  6. Once rested, unwrap the sandwich and slice it into manageable portions before serving.
