- Begin by slicing the ciabatta loaf horizontally to create two equal halves. Drizzle olive oil over both cut sides and spread the olive tapenade across each half.
- On the bottom half of the ciabatta, crumble the goat cheese evenly and add thin slices of tomato, followed by the shredded roast chicken and optional pepperoncini.
- Lay the arugula over the top of the chicken and gently press down to compact the filling slightly.
- Carefully place the top half of the ciabatta onto the sandwich and tightly wrap it in plastic wrap.
- Place a heavy object on top of the wrapped sandwich and let it rest for at least 1 hour at room temperature or overnight in the refrigerator.
- Once rested, unwrap the sandwich and slice it into manageable portions before serving.
