Ingredients
  

For the Cookie Dough
  • 2 cups All-purpose flour
  • 1 cup Unsalted butter softened
  • 1/2 cup Granulated sugar
  • 1/4 cup Brown sugar packed
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Baking powder
For the Filling
  • 1 cup Fruit preserves your choice

Method
 

Cookie Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Chill the dough in the refrigerator for about 30 minutes.
Baking the Cookies
  1. Scoop tablespoon-sized amounts of dough and roll into balls.
  2. Place the balls onto the prepared baking sheet, spacing them apart.
  3. Using your thumb, create an indentation in the center of each ball.
  4. Fill each indentation with your preferred fruit preserves.
  5. Bake for 12-15 minutes until the edges are lightly golden.
  6. Allow cooling on a wire rack before serving.
