Cookie Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.

- Add the egg and vanilla extract, and mix until well combined.

- In another bowl, whisk together the flour and baking powder, then gradually add to the wet mixture.

- Using a cookie scoop, drop dough onto the prepared baking sheets.

- Make an indentation in the center of each cookie using your thumb or the back of a spoon.

- Fill each indentation with your chosen fruit jam.

- Bake in the preheated oven for 12-15 minutes, or until lightly golden around the edges.

- Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
