Cookie Preparation
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Beat in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, salt, and baking powder.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
Baking the Cookies
- Scoop tablespoon-sized amounts of dough and roll into balls.
- Place the balls onto the prepared baking sheet, spacing them apart.
- Using your thumb, create an indentation in the center of each ball.
- Fill each indentation with your preferred fruit preserves.
- Bake for 12-15 minutes until the edges are lightly golden.
- Allow cooling on a wire rack before serving.
