Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 350°F (177°C) and grease a 9-inch loaf pan with olive oil.
  2. Whisk together 2 eggs, 1 cup of milk and 1/4 cup of olive oil until smooth.
  3. Sift together 2 cups of flour, 1 tablespoon of baking powder, 1/2 teaspoon of baking soda, and 1 teaspoon of salt in another bowl.
  4. Pour the dry mixture into the wet mixture and stir gently until just combined.
  5. Fold in 1 cup of cheddar cheese, 1 cup of grated zucchini, 1 cup of diced tomatoes, 1/4 cup of green onions, 1/4 cup of basil, and 2 minced garlic cloves.
  6. Pour the batter into the greased pan and sprinkle 1/4 cup of parmesan cheese on top.
  7. Bake for 50-60 minutes until golden brown and a toothpick comes out clean.
  8. Cool in the pan for 20 minutes before transferring to a rack to cool completely.
