Step-by-Step Instructions
  1. Begin by washing the zucchini under cool running water, then slice into thick rounds or half-moons, about ¾ inch thick.
  2. In a small saucepan, melt the unsalted butter over low heat, then add minced garlic and simmer for 3-5 minutes.
  3. In a large mixing bowl, combine the sliced zucchini with garlic butter, drizzle with olive oil, and sprinkle with salt and pepper.
  4. Soak wooden skewers in water for 30 minutes. Thread the seasoned zucchini slices onto the skewers.
  5. Preheat the grill to medium-high heat (400°F/200°C). Grill skewers for 8-10 minutes, turning occasionally.
  6. Remove from grill, drizzle with fresh lemon juice, and serve hot.

Notes

Soak skewers for 30 minutes before grilling. Avoid browning the garlic.
