  • 2 pounds Bone-In Chicken Pieces a mix of thighs and drumsticks
  • 1 piece Scotch Bonnet Pepper optional
For the Gravy
  • 2 tablespoons Brown Sugar do not let it burn
  • 3 tablespoons Vegetable Oil for frying
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 2 medium Carrots diced
  • 4 stalks Scallions chopped
  • 4 cloves Garlic minced
  • 5 sprigs Fresh Thyme
  • 1 teaspoon Allspice Berries
  • 2 tablespoons Ketchup
  • 2 tablespoons Soy Sauce
  • 2 cups Chicken Broth
For the Rice
  • 1 cup Long-Grain White Rice
  • 1 can Canned Coconut Milk
  • 1 can Canned Kidney Beans drained
  • 2 cups Water
  • 1 teaspoon Salt

Method
 

Step-by-Step Instructions
  1. Marinate the Chicken: Pat the chicken pieces dry, season with salt and pepper, mix in scallions, garlic, thyme, and marinate for at least 30 minutes.
  2. Create the Browning Sauce: Heat vegetable oil, add brown sugar, let caramelize to a rich dark color, then sear the chicken pieces until golden brown.
  3. Build the Gravy: Remove chicken, add onions, bell peppers, carrots, sauté for 5-7 minutes, then add scallions, garlic, broth, ketchup, soy sauce, allspice, and optional scotch bonnet.
  4. Braise the Chicken: Return chicken to the pot, cover, and simmer on low for 45-50 minutes until tender.
  5. Prepare the Coconut Rice and Beans: Combine rice, kidney beans, coconut milk, water, and salt; boil, reduce heat, and cover for 20 minutes.
  6. Serve the Dish: Fluff coconut rice, serve chicken over it, garnish with fresh thyme.
