  • 1/4 cup Tahini For the sauce
  • 2 tablespoons Honey Can replace with maple syrup for vegan
  • 1 tablespoon Lemon Juice For acidity
Garnishing
  • 2 tablespoons Fresh Parsley Chopped, for garnishing
  • 1 tablespoon Sesame Seeds Optional, for garnishing

Method
 

Preparation Steps
  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the cauliflower into bite-sized florets.
  3. Drizzle olive oil over the cauliflower florets and toss with cumin, coriander, smoked paprika, salt, and pepper.
  4. Spread the seasoned cauliflower on a parchment-lined baking sheet and roast for 20-25 minutes.
  5. While roasting, whisk together tahini, honey, lemon juice, and a pinch of salt in a medium bowl. Add water to achieve desired consistency.
  6. Once roasted, transfer cauliflower to a serving bowl and drizzle with tahini-honey sauce.
  7. Garnish with chopped parsley and sesame seeds before serving.
