  • 12 pieces Potstickers homemade or store-bought
For the Broth
  • 6 cups Low-sodium vegetable or chicken broth
  • 2 tablespoons Soy Sauce low-sodium recommended
For the Vegetables
  • 1 cup Bell Peppers chopped
  • 1 medium Zucchini sliced thinly
  • 1 cup Snap Peas fresh
  • 1 cup Corn frozen or fresh
For Thickening (Optional)
  • 1 tablespoon Cornstarch mixed with 2 tablespoons of water
For Extra Flavor (Optional)
  • 1 piece Kombu or Dried Shiitake Mushrooms or Miso Paste a little goes a long way
For Serving
  • 2 cups Rice jasmine or brown rice

Step‑by‑Step Instructions
  1. In a large pot, pour in 6 cups of low-sodium vegetable or chicken broth and set it over medium heat. Bring to a simmer for about 5 minutes.
  2. Carefully add potstickers to the broth, ensuring they are well spaced. Cook for 5 to 7 minutes until they float.
  3. Stir in your choice of vegetables and simmer for an additional 3 to 5 minutes until they are tender.
  4. To thicken, mix 1 tablespoon of cornstarch with 2 tablespoons of water, then stir into the soup.
  5. Add soy sauce, starting with 1-2 tablespoons, and adjust to taste.
  6. Ladle soup into bowls and serve with jasmine or brown rice on the side.

Notes

Store leftovers in the fridge for up to 3 days. Freeze without potstickers for longer storage.
