Step-by-Step Instructions for Strawberry Fig Jam
  1. Wash figs and strawberries thoroughly, chop figs, and slice strawberries.
  2. Combine figs, strawberries, sugar, and lemon juice in a saucepan, bring to a boil, then simmer for 25-30 minutes.
  3. Stir in balsamic vinegar once jam has thickened.
  4. Test doneness by placing a spoonful on a chilled plate; if it wrinkles, it's ready.
  5. Fill sterilized jars with jam, leaving about ¼ inch space at the top.
  6. Process jars in boiling water for at least 10 minutes.
  7. For Vanilla Fig Jam, omit balsamic vinegar and add vanilla bean or extract.
  8. Refrigerate after opening and consume within 3-4 weeks.

Notes

Use ripe figs for best flavor. Adjust sugar to your preference. Test doneness on a chilled plate. Seal jars tightly for shelf life. Start with less balsamic vinegar if unsure.
