Method
 

Step-by-Step Instructions
  1. Prepare the vegan lemon curd by whisking together lemon juice, zest, sugar, and cornstarch over medium heat until thickened. Let cool before storing in the fridge.
  2. Soak cashews in water for at least 4 hours or cover in boiling water for 30 minutes. Drain and rinse.
  3. Blitz vegan cookies with sea salt in a food processor. Melt vegan butter and blend with crumbs until it holds together. Press into a lined loaf pan and refrigerate.
  4. Blend soaked cashews, chilled lemon curd, vegan cream cheese, yogurt, vanilla extract, and agave/maple syrup until smooth. Pour over crust and spread evenly.
  5. Gently heat remaining lemon curd until spreadable, pour over filling, and smooth out. Cover and refrigerate for at least 1 hour or freeze for 30 minutes.
  6. Slice into squares with a hot knife and serve. Enjoy or store in the fridge for up to 5 days.

Notes
