  • 1 cup Granulated Sugar adjust to taste
  • 1/2 cup Vegan Butter melted and cooled

  • 1/2 cup Vegan Greek-style Yogurt thick consistency works best
  • 1 tbsp Apple Cider Vinegar or lemon juice as substitute
  • 1 tsp Vanilla Extract
  • 2 cups All-Purpose Flour regular or gluten-free flour
  • 1 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt do not omit
For the Mango Glaze
  • 1 cup Powdered Sugar adjust to taste
  • 1/2 cup Vegan Yogurt plain or flavored
  • 1/4 cup Mango Purée

Step-by-Step Instructions for Vegan Mango Cake
  1. Preheat your oven to 180°C (356°F). Grease an 8-inch loaf pan with vegan butter and line with parchment paper.
  2. In a large mixing bowl, whisk together mango purée, granulated sugar, melted vegan butter, olive oil, vegan yogurt, apple cider vinegar, and vanilla extract until smooth.
  3. In a separate bowl, sift together all-purpose flour, baking powder, baking soda, and sea salt. Gradually mix into the wet ingredients until just combined.
  4. Pour the batter into the prepared loaf pan and smooth the top. Create a pattern with a butter knife for even rising.
  5. Bake for 45-50 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
  6. While the cake cools, mix powdered sugar, vegan yogurt, and mango purée until smooth for the glaze.
