  1. Start by freezing ½ cup of unsalted butter while you combine 1 ½ cups of all-purpose flour, ½ teaspoon of kosher salt, and ¼ cup of granulated sugar in a food processor. Once the butter is chilled, add it along with ¼ cup of vegetable shortening, pulsing until the mixture resembles coarse crumbs. Gradually drizzle in ice-cold water, about 3-4 tablespoons, until a dough forms. Wrap in plastic and refrigerate for at least 30 minutes.
  2. Preheat your oven to 400°F (200°C). Roll out the chilled crust on a floured surface until it’s about ⅛ inch thick, then fit it into a 9-inch pie plate. Freeze it for another 15 minutes.
