  • 3-4 cups icing sugar sift before using

Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare two 7-inch round cake pans with grease and parchment paper.
  2. Combine 1 cup of dairy-free milk with 1 tablespoon of white vinegar and let sit to create vegan buttermilk.
  3. Whisk together the dry ingredients: plain flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. Mash 3-4 overripe bananas in a large bowl until smooth with a few lumps left for texture.
  5. Mix in the canola oil, vanilla extract, white sugar, and brown sugar with the mashed bananas until fully incorporated.
  6. Gradually add the dry ingredients and vegan buttermilk to the banana mixture until just combined.
  7. Divide batter evenly between the prepared pans and bake for 30 minutes or until a toothpick comes out clean.
  8. Allow the cake layers to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
