Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream softened butter and honey together until smooth.
  3. Add the egg and vanilla extract to the creamed mixture, mixing until well blended.
  4. In a separate bowl, whisk together the flour, baking powder, cinnamon, and salt.
  5. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  6. Using a cookie scoop, place rounded spoonfuls of dough on the prepared baking sheet.
  7. Bake the cookies for 10-12 minutes until lightly golden around the edges.
  8. Let the cookies cool on the baking sheet for about 5 minutes before transferring to a wire rack.
