Pancake Batter
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 large egg
  • 1 cup buttermilk or mix regular milk with vinegar
  • 2 tablespoons melted butter reserve for greasing
  • 1/2 cup maraschino cherries chopped, reserve some for topping
  • 1/2 cup mini semi-sweet chocolate chips
For Serving
  • 1 can cherry pie filling
  • to taste chocolate syrup
  • to taste whipped cream

Method
 

Pancake Preparation
  1. Preheat the griddle to medium heat (350°F) for about 5 minutes.
  2. In a mixing bowl, whisk together all-purpose flour, sugar, salt, baking soda, and baking powder.
  3. Stir in mini chocolate chips until well-coated in the dry mixture.
  4. In a separate bowl, beat the egg, then mix in buttermilk and melted butter until smooth.
  5. Fold in chopped maraschino cherries to the wet ingredients.
  6. Pour dry ingredients into the wet mixture and stir until just combined.
  7. Grease the preheated griddle lightly with butter.
  8. Pour 1/4 cup of batter onto the griddle for each pancake.
  9. Cook for 5-7 minutes until bubbles appear, then flip and cook until golden-brown.
  10. Serve pancakes topped with cherry pie filling, chocolate syrup, and whipped cream.
