- In a medium mixing bowl, combine softened plain goat cheese and cream cheese, blending until smooth and creamy, about 2–3 minutes.
- Fold in the finely chopped prosciutto, orange zest, and fresh thyme leaves until well-distributed, creating a harmonious blend.
- Divide the mixture into 12 equal portions, rolling each into smooth, bite-sized balls.
- Roll each cheese ball in finely chopped roasted pistachios until evenly coated.
- Chill the bonbons in the refrigerator for 20–30 minutes to firm up.
- To serve, skewer each bonbon with a toothpick, folding a piece of prosciutto and adding a Castelvetrano olive.
