Preparation
  1. In a medium mixing bowl, combine softened plain goat cheese and cream cheese, blending until smooth and creamy, about 2–3 minutes.
  2. Fold in the finely chopped prosciutto, orange zest, and fresh thyme leaves until well-distributed, creating a harmonious blend.
  3. Divide the mixture into 12 equal portions, rolling each into smooth, bite-sized balls.
  4. Roll each cheese ball in finely chopped roasted pistachios until evenly coated.
  5. Chill the bonbons in the refrigerator for 20–30 minutes to firm up.
  6. To serve, skewer each bonbon with a toothpick, folding a piece of prosciutto and adding a Castelvetrano olive.
