Method
 

Step-by-Step Instructions
  1. In a mixing bowl, combine the ground chicken with garlic powder, paprika, salt, and pepper. Mix thoroughly to incorporate seasonings into the chicken.
  2. Heat a non-stick skillet over medium heat. Add the seasoned ground chicken mixture and cook for 8–10 minutes, breaking it into small pieces with a spatula.
  3. In a separate skillet, warm the small tortillas over medium-low heat for about 30 seconds on each side.
  4. In another non-stick skillet, sprinkle shredded cheese evenly and cook over medium-low heat until golden, about 3–4 minutes. Lift out with a spatula.
  5. Layer the tacos with a warm tortilla, a scoop of cooked chicken, chopped dill pickles, and shredded cabbage. Top with blended cottage cheese, drizzle with pickle brine, and crown with crispy cheese lace.
