Method
 

Preparation
  1. In a medium bowl, whisk together the sweet chili sauce, soy sauce, honey, lime juice, and ground ginger until well combined. Set aside half of the marinade for later.
  2. Place the chicken breasts in a resealable bag, pour in the marinade, seal tightly and refrigerate for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Add the marinated chicken and sear for 4-5 minutes on each side until golden brown.
  4. Reduce heat to medium-low, pour reserved marinade over chicken, and simmer for 3-4 minutes until the sauce thickens.
  5. Transfer the chicken and sauce to the pressure cooker, seal and cook for approximately 10 minutes on poultry mode.
  6. Plate the chicken and garnish with sliced green onion and lime wedges. Serve over rice or noodles.

Notes

For deeper flavor, marinate chicken overnight. Use fresh ingredients for best results and ensure proper cooking temperature.
