Effortless Cheesy Potato Puff Pastry – A Lazy Morning Delight

This Cheesy Potato Puff Pastry is the perfect blend of crispy, golden pastry and a creamy, cheesy filling. Made with soft mashed potatoes, ricotta or cream cheese, and layers of melted mozzarella and Parmesan, this dish is effortlessly delicious. Whether for breakfast, a snack, or a quick meal, it's easy to make and impossible to resist!

Ingredients
  

  • 350 g 12 oz potatoes, peeled
  • 150 g 5 oz soft cheese (Stracchino, cream cheese, or ricotta)
  • 30 g 1 oz grated Parmesan cheese + extra for topping
  • 1 puff pastry sheet
  • 100 g 3.5 oz cooked ham, sliced
  • ½ cup shredded mozzarella cheese
  • 1 egg beaten with 1 tbsp milk (for egg wash)
  • Black pepper to taste
  • Salt to taste

Method
 

  1. Boil the Potatoes: Cook the peeled potatoes in salted water until soft. Drain and mash them in a bowl.
  2. Make the Filling: Mix the mashed potatoes with soft cheese, grated Parmesan, salt, and black pepper until creamy.
  3. Assemble the Pastry: Roll out the puff pastry on a baking sheet. Spread the potato mixture evenly over half of the pastry. Layer the cooked ham and shredded mozzarella on top.
  4. Fold & Seal: Fold the other half of the pastry over the filling and seal the edges by pressing with a fork.
  5. Apply Egg Wash: Brush the top with the egg wash and sprinkle extra Parmesan cheese for a golden, crispy finish.
  6. Bake: Preheat the oven to 375°F (190°C). Bake for 20–25 minutes or until golden brown and puffed.
  7. Cool & Serve: Let it rest for a few minutes before slicing. Serve warm and enjoy!

Notes

  • Cheese Substitutes: Swap mozzarella with cheddar, gouda, or feta for a different flavor.
  • Vegetarian Option: Skip the ham and add sautéed mushrooms, spinach, or sun-dried tomatoes.
  • Make-Ahead Tip: Assemble the pastry and refrigerate before baking, or freeze it and bake directly from frozen.
