Step-by-Step Instructions for Entomatadas
- Heat the Oil: Begin by heating 1-2 tablespoons of vegetable oil in a large skillet over medium heat. Fry each tortilla for about 10-15 seconds on each side until soft and pliable. Remove and place on paper towels.
- Sauté Onions and Garlic: In the same skillet, add more oil if needed, then add ½ cup of chopped onions and 2 minced garlic cloves. Sauté for about 2-3 minutes until onions are translucent.
- Prepare the Sauce: Pour in 2 cups of tomato sauce along with 1 teaspoon of cumin, 1 teaspoon of chili powder, salt, and pepper. Simmer for about 5 minutes.
- Preheat the Oven: Preheat your oven to 350°F (175°C).
- Layer the Baking Dish: Spread a small amount of the tomato sauce mixture on the bottom of a 9x13 inch baking dish.
- Assemble the Entomatadas: Dip each tortilla in the sauce, fill with cheese and cilantro, roll them up, and place in the baking dish with more sauce and cheese.
- Final Layer and Bake: Top with a final layer of sauce and cheese, then bake for 15-20 minutes until cheese is melted and bubbly.
- Garnish and Serve: Let cool for a minute, garnish with cilantro and sour cream if desired. Serve warm.
