Ingredients
  

For the Pavlova
  • 4 large Egg Whites at room temperature
  • 1 cup Granulated Sugar superfine recommended
  • 1 tablespoon Cornstarch
  • 1 teaspoon White Vinegar
For the Caramelized Apples
  • 2 tablespoons Unsalted Butter or coconut oil for dairy-free
  • 3 cups Apples sliced, such as Granny Smith or Honeycrisp
  • 1 cup Light Brown Sugar or coconut sugar
  • 1 tablespoon Fresh Lemon Juice or apple cider vinegar
  • 1 tablespoon Ground Cinnamon or pumpkin pie spice
  • 1 teaspoon Vanilla Extract or almond extract
For the Cinnamon Whipped Cream
  • 1 cup Heavy Whipping Cream or coconut cream for non-dairy
  • 2 tablespoons Granulated Sugar or honey
  • 2/3 teaspoon Ground Cinnamon

Method
 

Preparation Instructions
  1. Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper. In a mixing bowl, whisk egg whites until soft peaks form. Gradually add sugar, whisking until glossy and stiff peaks form, about 5–7 minutes. Fold in cornstarch and vinegar until combined.
  2. Spoon the meringue onto the prepared parchment, shaping it into a circular disk with a slight indent in the center. Bake for 1 hour until crispy. Turn off oven and cool inside for at least 3 hours.
  3. Melt butter in a skillet over medium heat. Add sliced apples, brown sugar, lemon juice, cinnamon, and vanilla. Cook for 10 minutes until apples are tender. Remove from heat and let cool.
  4. In a mixing bowl, pour heavy whipping cream and add sugar and cinnamon. Beat on medium speed until foamy, then increase to medium-high until stiff peaks form, about 2–4 minutes.
  5. Transfer cooled pavlova to a serving dish and spread cinnamon whipped cream on top. Layer with caramelized apples and drizzle with syrup. Serve immediately.

Notes

Allow pavlova to cool completely in the oven to maintain texture.
