  • 3 cups strong white bread flour can substitute with all-purpose flour
  • 1 cup warm water around 100°F (38°C)
  • 2 teaspoons active dried yeast or instant yeast
  • 1 teaspoon cinnamon or nutmeg/allspice
  • 2 tablespoons extra virgin olive oil or vegetable/avocado oil
  • 1 teaspoon salt just a pinch is sufficient

  • 1 tablespoon rosemary or thyme/dried herbs
  • 1 tablespoon parsley or basil/cilantro
  • 1 cup pomegranate seeds or dried cranberries/halved grapes

Method
 

Dough Preparation
  1. In a large bowl, mix warm water with yeast, cinnamon, and olive oil. Add salt and gradually incorporate flour until a rough dough forms. Cover and rest for 30 minutes.
  2. Turn the dough onto a floured surface and knead for about 1.5 hours until smooth and elastic.
  3. Line a baking tray with parchment paper, drizzle with olive oil, and shape the dough to fill the tray. Cover and let it rise for 2 hours.
  4. Preheat the oven to 400°F (200°C) about 30 minutes before the dough has finished rising.
  5. Create dimples on the risen dough, sprinkle with rosemary and parsley, add pomegranate seeds, and drizzle with olive oil.
  6. Sprinkle flaky sea salt on top, then bake for 25-30 minutes until golden brown. Let it cool for 10 minutes before slicing.

Notes

For best results, ensure your warm water is at the correct temperature to activate the yeast. Knead thoroughly for optimal rise.
