Step-by-Step Instructions for Grinch Pancakes
  1. In a medium bowl, beat 4 ounces of cream cheese with 1 cup of powdered sugar and 1 teaspoon of vanilla extract until smooth, about 3-5 minutes.
  2. Chill a mixing bowl and beaters, then pour in 1 cup of heavy whipping cream, add 2 tablespoons of powdered sugar, 1 teaspoon of vanilla, and green food coloring. Beat until stiff peaks form.
  3. In a large mixing bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, and a pinch of salt.
  4. In a separate bowl, crack 1 egg, whisk lightly, then add 1 cup of buttermilk and 2 tablespoons of melted butter, mixing well.
