  • ½ cup unsalted butter softened
  • ½ cup creamy peanut butter
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract high-quality
Dry Mixture

Marshmallow Filling
  • 1 teaspoon marshmallow fluff lightly coat spoon with cooking spray to avoid sticking

Method
 

Baking Instructions
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together the unsalted butter and creamy peanut butter in a large mixing bowl until light and fluffy.
  3. Add the eggs one at a time, mixing until fully incorporated, then add the vanilla extract.
  4. Whisk together the flour, baking soda, baking powder, and salt in a separate bowl before combining with the wet ingredients.
  5. Gradually incorporate the dry mixture until just combined and slightly sticky.
  6. Use a medium cookie scoop to portion the dough onto baking sheets, flattening each cookie slightly.
  7. Add marshmallow fluff into the center of each cookie and wrap the dough around it to encase the filling.
  8. Sprinkle mini marshmallows or chopped peanuts on top if desired, then bake for 10–12 minutes.
  9. Let the cookies cool for 5 minutes on the baking sheets before transferring to a wire rack.

Notes

Avoid overfilling the cookies with marshmallow fluff and consider chilling the dough if it becomes sticky.
