Ingredients
  

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed fresh fruit strawberries, blueberries, and bananas
  • ¼ cup strawberry preserves optional

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a large pizza pan or a baking sheet with cooking spray or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  5. Spread the cookie dough evenly onto the prepared pizza pan, shaping it into a large circle. Bake for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let it cool completely.
  6. In a separate bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  7. Once the cookie base is completely cool, spread the cream cheese mixture evenly over the top.
  8. Arrange the mixed fresh fruit on top of the cream cheese layer, creating a festive design.
  9. If desired, warm the strawberry preserves in the microwave for about 15 seconds and drizzle it over the fruit for added sweetness and shine.
  10. Chill the fruit pizza in the refrigerator for at least 30 minutes before slicing and serving.
