Method
 

Step-by-Step Instructions
  1. Chop the watermelon into bite-sized cubes and slice the cucumber into thin rounds. Roughly chop mint leaves.
  2. In a large mixing bowl, gently combine the watermelon cubes, sliced cucumbers, and chopped mint leaves.
  3. Drizzle lime juice over the salad and gently toss to coat all ingredients.
  4. Allow the salad to rest for about 30 minutes at room temperature before serving.
  5. Just before serving, add optional feta cheese or toasted nuts for extra texture.
