  • 2 cups chopped kale or Swiss chard
  • 1 cup green peppers chopped, optional
  • 1 onion diced
  • 2 garlic cloves minced
  • fresh herbs like parsley and cilantro
For the Protein
  • 4 eggs can substitute with tofu for vegan

Method
 

Step-by-Step Instructions
  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add diced onion and minced garlic, cooking for about 5 minutes until soft.
  2. Stir in the chopped spinach and kale, cooking for 4-5 minutes until wilted. If using, add green peppers.
  3. Season with salt, pepper, and chopped fresh herbs. Stir to combine and cook for 2 more minutes.
  4. Create four small wells in the mixture and crack an egg into each well.
  5. Cover the skillet and reduce heat to low. Poach eggs for 6-8 minutes until whites are set.
  6. Garnish with additional fresh herbs and a drizzle of olive oil. Serve immediately with crusty bread.
