Step‑by‑Step Instructions
  1. Start by cutting the chicken breasts into even bite-sized pieces, roughly 1-inch cubes. Set aside.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat for about 1-2 minutes until shimmering.
  3. Add the prepared chicken pieces to the skillet in a single layer. Season with Italian seasoning, salt, and pepper. Sauté for about 5 minutes until golden brown and fully cooked.
  4. Once the chicken is cooked, lower the heat slightly and stir in the minced garlic. Cook for an additional minute until fragrant.
  5. Add the cherry tomatoes and broccoli florets, stirring to combine. Cook for around 5 minutes until the broccoli is tender.
  6. Gently fold in the spinach, shredded mozzarella, and cream cheese. Continue cooking until the spinach wilts and the cheeses melt.
  7. Remove the skillet from heat, taste and adjust the seasoning if needed. Serve immediately, garnishing with fresh parsley.
