Step‑by‑Step Instructions
- Start by cutting the chicken breasts into even bite-sized pieces, roughly 1-inch cubes. Set aside.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat for about 1-2 minutes until shimmering.
- Add the prepared chicken pieces to the skillet in a single layer. Season with Italian seasoning, salt, and pepper. Sauté for about 5 minutes until golden brown and fully cooked.
- Once the chicken is cooked, lower the heat slightly and stir in the minced garlic. Cook for an additional minute until fragrant.
- Add the cherry tomatoes and broccoli florets, stirring to combine. Cook for around 5 minutes until the broccoli is tender.
- Gently fold in the spinach, shredded mozzarella, and cream cheese. Continue cooking until the spinach wilts and the cheeses melt.
- Remove the skillet from heat, taste and adjust the seasoning if needed. Serve immediately, garnishing with fresh parsley.
Notes
This dish is versatile; swap out chicken for another protein or add different vegetables.
