Method
Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Line a large baking sheet with parchment paper or lightly grease it.
Prepare the Chicken:
- Pat the chicken dry with paper towels to help the seasoning stick.
- In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper.
- Rub olive oil over the chicken and coat evenly with the seasoning mixture.
Season the Potatoes:
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and pepper.
- Ensure the potatoes are fully coated with the mixture.
Assemble on the Pan:
- Place the seasoned chicken on one side of the prepared baking sheet.
- Spread the potatoes in a single layer on the other side, leaving space between them for even roasting.
Bake:
- Roast in the preheated oven for 25–30 minutes. Flip the potatoes halfway through for even crisping.
- Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (74°C).
Optional Finishing Touch:
- In the last 5 minutes of cooking, sprinkle extra Parmesan over the chicken and potatoes.
- Switch the oven to broil for a golden, crispy finish.
Serve and Garnish:
- Remove the baking sheet from the oven and sprinkle fresh parsley over the chicken and potatoes.
- Serve hot and enjoy!
Notes
- Use evenly sized chicken breasts or thighs to ensure uniform cooking.
- Avoid overcrowding the pan to achieve crispy potatoes and properly roasted chicken.
- If using bone-in chicken, adjust the cooking time accordingly.
