Ingredients
  

For the Chicken:
  • 4 boneless skinless chicken breasts (or thighs)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
For the Potatoes:
  • 1.5 lbs baby Yukon Gold or red potatoes halved
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • cup grated Parmesan cheese
  • ½ tsp salt
  • ¼ tsp black pepper
Optional Garnish:
  • 1 tbsp fresh parsley chopped

Method
 

Preheat the Oven:
  1. Preheat your oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or lightly grease it.
Prepare the Chicken:
  1. Pat the chicken dry with paper towels to help the seasoning stick.
  2. In a small bowl, mix Italian seasoning, smoked paprika, salt, and black pepper.
  3. Rub olive oil over the chicken and coat evenly with the seasoning mixture.
Season the Potatoes:
  1. In a large bowl, toss the halved potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and pepper.
  2. Ensure the potatoes are fully coated with the mixture.
Assemble on the Pan:
  1. Place the seasoned chicken on one side of the prepared baking sheet.
  2. Spread the potatoes in a single layer on the other side, leaving space between them for even roasting.
Bake:
  1. Roast in the preheated oven for 25–30 minutes. Flip the potatoes halfway through for even crisping.
  2. Use a meat thermometer to check that the chicken reaches an internal temperature of 165°F (74°C).
Optional Finishing Touch:
  1. In the last 5 minutes of cooking, sprinkle extra Parmesan over the chicken and potatoes.
  2. Switch the oven to broil for a golden, crispy finish.
Serve and Garnish:
  1. Remove the baking sheet from the oven and sprinkle fresh parsley over the chicken and potatoes.
  2. Serve hot and enjoy!

  • Use evenly sized chicken breasts or thighs to ensure uniform cooking.
  • Avoid overcrowding the pan to achieve crispy potatoes and properly roasted chicken.
