Ingredients
  

  • 1 pound boneless skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 4 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs oregano, basil, thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)
  • Skewers wooden or metal

Method
 

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, Italian herbs, salt, and black pepper. Mix well to create a marinade.
  3. Add the chicken cubes to the marinade and toss until evenly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F.
  7. Remove from the grill and let rest for a few minutes. Garnish with chopped parsley before serving.

Notes

  • For a spicy kick, add a pinch of red pepper flakes to the marinade.
  • Substitute chicken with shrimp or cubed tofu for a different protein option.
