  1. Prepare Gochujang Caramel Paste by combining softened unsalted butter, light brown sugar, and gochujang in a bowl.
  2. Make cookie dough by creaming butter and granulated sugar until light and fluffy, then add egg and vanilla.
  3. Combine dry ingredients in a separate bowl and mix with wet ingredients until just incorporated.
  4. Chill dough covered with plastic wrap for 10-15 minutes.
  5. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  6. Mix gochujang caramel into the chilled dough to create marbled patterns.
  7. Scoop dough onto the baking sheets, spacing them about 2 inches apart, and bake for 11-13 minutes.
