Ingredients
  

  • 200 g chickpeas soaked and cooked
  • 1 onion chopped
  • 2 tablespoons vegetable oil
  • 3 cloves garlic minced
  • 1 piece ginger grated
  • 1 bell pepper chopped
  • 3 tomatoes chopped
  • Boiling water enough to cover tomatoes
  • Salt to taste
  • Ground black pepper to taste
  • 1 teaspoon turmeric

Method
 

  1. Sauté the Aromatics
  2. Heat vegetable oil in a pan over medium heat.
  3. Add the chopped onion and sauté until golden brown.
  4. Stir in the minced garlic and grated ginger, cooking for another minute.
  5. Cook the Vegetables
  6. Add the chopped bell pepper and cook for 2 minutes.
  7. Toss in the tomatoes and pour in enough boiling water to cover them.
  8. Let it simmer until the tomatoes soften and form a sauce.
  9. Add the Chickpeas
  10. Stir in the cooked chickpeas.
  11. Season with salt, black pepper, and turmeric.
  12. Simmer for about 10 minutes, stirring occasionally.
  13. Serve and Enjoy
  14. Garnish with fresh herbs if desired.
  15. Serve warm with rice, flatbread, or as a side dish.
