Peel and grate the potatoes. Place them in a clean kitchen towel and squeeze out any excess moisture.
Finely chop or grate the onion and mix it with the grated potatoes in a bowl.
Add the egg, salt, pepper, Italian herbs, and flour. Stir well until the mixture is evenly combined.
Heat vegetable oil in a frying pan over medium heat.
Take a spoonful of the potato mixture and flatten it into a pancake shape. Place it in the pan and repeat with the remaining mixture.
Fry for about 3–4 minutes on each side, or until golden brown and crispy.
Transfer the pancakes to a paper towel-lined plate to drain excess oil.
Serve warm with sour cream, applesauce, or your favorite dip.
