Ingredients
  

  • 1 pound ground chicken
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup red onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 4 whole wheat burger buns
  • 1 cup baby spinach or mixed greens
  • 1 cup plain Greek yogurt
  • 1/2 cucumber grated and excess moisture squeezed out
  • 1 clove garlic minced
  • 1 tablespoon fresh dill chopped (or 1 teaspoon dried dill)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

  1. In a mixing bowl, combine the ground chicken, feta cheese, parsley, red onion, garlic, oregano, salt, and pepper. Mix until well combined, but do not overwork the meat.
  2. Divide the mixture into four equal portions and shape each portion into a patty, about 1 inch thick.
  3. Heat the olive oil in a large skillet over medium heat. Cook the patties for about 5-6 minutes on each side, or until they are cooked through and have an internal temperature of 165°F.
  4. While the burgers are cooking, prepare the tzatziki sauce by mixing together the Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl. Adjust seasoning to taste.
  5. Toast the whole wheat burger buns if desired. Assemble the burgers by placing a patty on each bun, topping with a generous spoonful of tzatziki sauce and a handful of baby spinach or mixed greens.

Notes

  • For added flavor, mix in some chopped sun-dried tomatoes or olives into the chicken mixture.
  • Serve the burgers with a side of sweet potato fries or a Greek salad for a complete meal.
