Ingredients
  

  • 4 boneless skinless chicken breasts2 tablespoons olive oil1 teaspoon Italian seasoningSalt and pepper to taste4 slices fresh mozzarella cheese2 Roma tomatoes, thinly sliced1/4 cup fresh basil leavesBalsamic glaze, for drizzling

Method
 

  1. Pat chicken breasts dry. Brush with olive oil and season both sides with Italian seasoning, salt, and pepper.
  2. Preheat grill to medium-high heat. Grill chicken for 5 to 7 minutes per side, or until cooked through and grill marks appear.
  3. In the last 2 minutes of grilling, top each chicken breast with a slice of mozzarella and tomato slices. Close the lid to allow the cheese to melt.
  4. Remove chicken from the grill. Sprinkle with fresh basil and drizzle with balsamic glaze.
  5. Serve hot with a fresh salad, pasta, or roasted vegetables.

Notes

  • Substitute mozzarella with burrata or provolone for a twist.
  • Add a thin slice of prosciutto under the cheese for extra richness.
  • Balsamic glaze can be made at home by reducing balsamic vinegar with a bit of honey.
