Ingredients

Marinade Preparation

  • In a medium bowl, whisk together the orange zest, fresh orange juice, minced garlic, honey, and dried thyme until well combined. Place the chicken halves in a resealable plastic bag, pour in the marinade, seal tightly, and refrigerate for 6-8 hours.

Chicken Cooking

  • Preheat your broiler and line a broiler pan with foil. After marinating, remove the chicken from the bag and discard the marinade. Season with salt and pepper, then broil for 15-20 minutes, turning once halfway through.

Dressing Preparation

  • Mix the dressing by combining olive oil, white wine vinegar, fresh orange juice, minced garlic, and finely chopped shallots in a glass jar. Shake vigorously until emulsified.

Salad Assembly
