Ingredients
  

  • 2 pounds boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice about 2 lemons
  • 2 tablespoons honey
  • 2 cloves garlic minced
  • 1 tablespoon fresh rosemary chopped
  • 1 tablespoon fresh thyme chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. In a large bowl, whisk together the olive oil, lemon juice, honey, minced garlic, rosemary, thyme, salt, and pepper until well combined.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
  4. Remove the chicken from the marinade and let any excess drip off. Discard the remaining marinade.
  5. Place the chicken on the grill and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. Remove the chicken from the grill and let it rest for 5 minutes before slicing. Serve warm.

Notes

  • For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
