Ingredients
  

  • 1 pound ground beef 80/20
  • 1 medium head of cauliflower chopped into small florets
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 bell pepper any color, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup shredded cheddar cheese optional
  • Fresh parsley chopped (for garnish)

Method
 

  1. Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper, cooking until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Season with smoked paprika, Italian seasoning, salt, and pepper. Cook until the beef is browned and cooked through, about 7-10 minutes.
  4. While the beef is cooking, steam the cauliflower florets until tender, about 5-7 minutes.
  5. Once the beef is cooked, add the steamed cauliflower to the skillet. Stir everything together and cook for an additional 3-5 minutes to combine the flavors.
  6. If using, sprinkle the shredded cheddar cheese on top and cover the skillet for 2-3 minutes until the cheese is melted.
  7. Remove from heat and garnish with chopped parsley before serving.

Notes

  • For a spicier dish, add red pepper flakes or diced jalapeños when cooking the beef.
  • You can substitute ground turkey or chicken for a leaner option, adjusting the cooking time as needed.
